For my current WIP, I'm writing in third person, but I still gave my narrator a name and put some thought into who she is and why she's telling this story. There's no need for the reader to know any of that stuff, but I find it very helpful.
The headcanon info can be so beneficial during the writing process. Like you said, the reader doesn't need to know everything. Some of it can remain the author's little secret.
There's also 3rd person deep POV where the narrator and the main character are one and the same.
